How to make it

  • In a saucepan, combine butter, Bisquick, onion, pepper and thyme; bring to a boil. Stir in the chicken broth and milk. Bring to a boil again, stirring constantly. Boil for 1 minute. Add in the chicken and frozen vegetables. Mix thoroughly and take pan off of the heat.
  • Pour mixture into a 9-inch square baking dish. Make topping and place over pie. Bake 45 minutes or until crust is a light, golden brown.
  • Topping
  • 1 1/2 cup Bisquick
  • 3 tablespoons hot water
  • 3 tablespoons butter, softened
  • Mix together all ingredients and form into a ball. Roll out dough and place over pot pie mixture.

    The TASTE is delectible! I know this is a QUICK recipie, but for those looking to spend a little more time in the kitchen..ha ha ha.. Read On! The first attempt didn't go so well! Too much Bisquick added to the butter and onions made the mixture look like GLUE. My husband followed the recipie to a "T" and it was dry and pasty after baking, but the FLAVOR WAS TO DIE FOR!! The 2nd attempt which I did...I didn't add the 1/2 cup Bisquick. I just sprinkled it in the pot until it started to thicken with the onions and the broth. I wish I could tell you exactly how much, but it was a look/feel. Once you add all the other ingredients, it will thicken. Instead of using fake chicken broth, I used stock I had already prepared in my freezer. I also used a fresh chopped carrot 1., chopped and blanced in boiling water. Frozen peas worked great. IF IF IF your mixture looks to dry, pasty, just add a little more milk or half/half, or broth. You'll have to adjust the pepper, thyme etc. OH AND ADD SALT!! Sorry to ramble but this was pretty much a complete RE-WORK. MY BEST SUGGESTION IS TO USE LEFT OVER CHICKEN FROM A POT OF HOME MADE CHICKE SOUP.

    Hi Phil!
    Yes, it is cooked chicken used in this recipe. You can cook it most any way you like - I've had good results with baked, grilled, boiled, sauteed, even the chunk chicken in a can, (in an emergency).

    It was very good! I did double it, go casserole style and change a couple of things to suit us but the bones were excellent to add to. It's nice to know there is a potpie recipe out there that you don't have to use "cream of" in. For me, the real blessing was that it took less than 15 minutes to put together. Thank you so much for sharing. =)
