I was attempting Shrimp Scampi and ended up with this gem. It tastes more like garlic bread than scampi to me and I think that's why I prefer it.

Ingredients
  • 1 lb shrimp, shelled and deveined
  • 3 T olive oil
  • 2 tsp garlic, minced
  • 1/2 c. parmesan cheese
  • 1 T dry parsley

Directions
  1. Mix 2 T olive oil, garlic, parmesan and parsley in small bowl. Set aside.
  2. Drizzle 1 T of olive oil in bottom of large baking dish.
  3. Lay shrimp flat (no overlapping shrimps) in dish.
  4. Brush garlic mixture over shrimp until well coated.
  5. Place dish in broiler for 5 min or until all shrimp are pink.
  6. I like them over cooked pasta. (The noodles are a good way to soak up the rest of the 'sauce')
