How to make it
- Dredge steaks in flour. Put clarified butter in skillet heat over medium high heat until hot. Add steaks, saute until brown, and medium rare, about 3 minutes per side. Remove steaks, place on platter and tent with foil. Add onions and leeks to pan. Saute about 2-3 minutes. Deglaze pan with Burgundy wine. Deglaze again with Heavy cream. Season to taste with salt and pepper. Plate steaks and pour some sauce over the steaks.
