How to make it

  • To roast garlic, place the entire head on a baking sheet in the oven preheated to 425. Bake for 20-30 minutes. To use just squeeze the roasted garlic from the papery husks.
  • While garlic is baking peel potatoes, slice thin, and cook in boiling water until very tender. Drain and return them to the heat to dry for a minute. Puree the potatoes and garlic through a food mill while they are still very hot. Add the heated milk, melted butter and warm cream cheese. Whip until very smooth and light.(Do not use a hand mixer it can make these gluey, instead whip with a whisk by hand or food processor with a mixer attachment on medium). Season with salt and pepper
