Roasted Garlic Mashed Potatoes

- 1 1/4 pound waxy potatoes ( i like yukon gold) shopping list
- 4 ounces milk (heated) shopping list
- 2 ounces butter ( melted) shopping list
- 2 ounces cream cheese (warmed) shopping list
- 1 whole head roasted garlic (instructions below) shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
How to make it
- To roast garlic, place the entire head on a baking sheet in the oven preheated to 425. Bake for 20-30 minutes. To use just squeeze the roasted garlic from the papery husks.
- While garlic is baking peel potatoes, slice thin, and cook in boiling water until very tender. Drain and return them to the heat to dry for a minute. Puree the potatoes and garlic through a food mill while they are still very hot. Add the heated milk, melted butter and warm cream cheese. Whip until very smooth and light.(Do not use a hand mixer it can make these gluey, instead whip with a whisk by hand or food processor with a mixer attachment on medium). Season with salt and pepper
