Sausage Gravy Recipe

Ingredients
  • 1/2 lb pan sausage
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon fine ground black pepper
  • 1-1/2 cups milk

Directions
  1. As you cook, break up the sausage meat into very small pieces with the back of a fork and brown well. After frying the sausage pieces, there will be caramelized particles left stuck to the bottom of the pan along with fat drippings from the meat.
  2. Adjust the drippings to about 3 tablespoons of fat; reserving any juices and the fried sausage meat. If needed, add butter or bacon drippings to bring fat to about 3 tablespoons.
  3. Add flour and mix into the fat and mix as much as possible. Brown but do not burn the flour.
  4. Gradually, add any reserved juices and the milk. Using a fork or other implement, deglaze the pan and mix the ingredients.
  5. Add the sausage meat and seasoning, then simmer until the gravy is thickened.
  6. Serve with hot Buttermilk Biscuits or over grits, mashed potatoes or rice.
