Ingredients
  • 4 boneless,skinless chicken breasts
  • 1/3 cup flour
  • 1 tsp. dried thyme
  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup milk
  • 1 tbls. vegetable oil
  • 1 medium onion, chopped
  • 1/2 cup chicken broth
  • 2 bay leaves
  • 1/2 tsp. celery seed
  • 1 can(12 0z.) evaporated milk
  • 2 tbls. flour

Directions
  1. Rinse chicken and pat dry
  2. In a bowl, mix next 5 ingredients.
  3. Put milk in another bowl.
  4. Dip chicken in milk and then flour mixture.
  5. Heat oil in skillet over med-high heat.
  6. Brown chicken on both sides. (about 2 minutes each side) and remove to a plate.
  7. Add onion to skillet and cook until tender.
  8. Stir broth, bay leaves, and celery seed into skillet.
  9. Add salt and pepper to taste
  10. Return chicken and any juices to skillet, bring to a boil.
  11. Lower to simmer, covered until chicken is done. ( about 10 minutes)
  12. Remove chicken to a plate and discard bay leaves.
  13. Mix together the evaporated milk and 2 tbls. flour.
  14. Stir into mixture in skillet.
  15. Stir over moderate heat for a minute or 2.
  16. Add chicken and serve over mashed potatoes or noodles.

Like a smothered southern chicken, yum....gotta love the thyme. It is just made for chicken. Great post.


Hi, just wanted to let you know that I cooked your thyme and chicken fricassee today and it was fantastic. All my family loved it. I didn't exactly stick to the procedure but I did put all the ingredients and I served it with a rice pilaf. However, I omitted one ingredient which is celery seeds. I haven't heard of this before. May be you can tell me something about this recipe, e.g. where is it's origin. I shall post it in my blog soon, so if you like you can give me some information about this dish and I can mention that I got the recipe from you.
