Alaskan Spinach Dip Recipe
A newer version of the old spanish favorite. Creamy and delicious with a bit of spice from the pepperjack cheese, and red bell pepper.

Ingredients
  • 3 cups spinach, cleaned and chopped
  • 2 pounds Pepper Jack cheese
  • 1 onion, diced
  • 1/2 cup red bell pepper, diced
  • 1 large tomato, chopped
  • 2 cups half-and-half cream

Directions
  1. Slowly melt the Pepper Jack cheese over a double boiler. When completely melted, stir in the half and half until the mixture becomes creamy and smooth. Next, add in the onion, pepper, tomato, and chopped spinach. Place dip into a serving bowl, and serve with bread or warm tortilla chips.
