How to make it

  • Mix all ingredients except cheese, croutons, cornstarch and 1/4 c water in large stovetop pot
  • Bring to Boil
  • Cover, and allow to gently boil 20-30 minutes, stirring occasionally
  • Remove lid and simmer, allowing to reduce and thicken
  • (Add beef stock, or seasoning as needed, as cooking time progresses)
  • Allow to simmer until 15 minutes til serving time
  • If needed at this time, mix cornstarch in 1/4 c water and pour into boiling soup
  • Stir constantly until thickened slightly
  • Ladle soup into individual, oven proof bowls
  • Place bowls on baking sheet
  • Add Croutons to each bowl
  • Cover each with a slice or handful of shredded GruyereCheese
  • Broil until cheese is melted
