Tripe is a dish Italians eat qute a bit especially in the poorer regions, I make it with a light marinara sauce (just boil the trippa) and a lot of garlic and fresh warm crusty bread. I agree with the preparation...either outside or at someone's house you don't like too much. TY for post will try this way.

I have been cooking tripas for a long time,it usually takes me 4 hours for them to be ready. 3 and a half hours to boil in the disco and 30 minutes to fry them in oil. You should try to cook them longer and in between boiling time you need to clean them. If you liked them before you will love them now.

How I love tripas. There is a little taco stand down the road and one of the cooks got me to try tripas years ago and I have been hooked since. Today will be my first try at cooking it. Thanks for the recipe.
