Ingredients
  • 2 tilapia or grouper or other small white flesh fish
  • oil for frying
  • 3 cloves garlic
  • 2 shallots or half of an onion
  • 4 chilli pepper
  • 1 tbs salt
  • 1/2 tbs sugar
  • 2 cups of water
  • pinch of white pepper
  • ground coriander seed powder
  • 200 ml coconut milk

Directions
  1. deep fry the tilapia until golden brown on both sides
  2. using a mortar and pestel bashed garlic, shallots and chilli snd salt into a fine paste (or just finely sliced them)
  3. using alittle oil saute this paste with low heat until fragant add water coconut milk and the rest of the ingridients cook until the sauce is thickened,
  4. taste it should be rich ,hot, spicy and not sweet (sugar is only to balance the flavor not to make it sweet)
  5. if it's not salty enough you can add alittle more salt
