Ingredients
  • 8 potoatoes, peeled (or not) quartered or halved if small
  • Olive oil
  • 1/2 cup plain bread crumbs
  • 1/2 tbsp oregano
  • 1 tbsp dried parsley
  • 1/2 tbsp powdered garlic
  • 1/2 tbsp chicken soup bouillon
  • 1/2 tsp powdered sweet paprika
  • 1 tsp powdered onion
  • 1 1/2 tbsp grated romano, parmasean or other strong, dry cheese (kefalograviera is great)
  • Pepper to taste

Directions
  1. Pre-heat oven to 400ºF
  2. Mix dry ingredients in small bowl
  3. Mix potatoes with 2 tbsp olive oil and place in small roasting pan, rounded part down
  4. Generously sprinkle herb & cheese mixture over each half or quarter potato
  5. Optional: drizzle additional olive oil over each potato
  6. Roast for 45 minutes or until done.

They sound great but I am a bit puzzled. Will they potatoes be ready in only 45 minutes and with so little olive oil?


The cheese also acts as an oil. My oven is fast so 45-50 minutes is all I need for them. If your potatoes are looking too brown and are not cooked, cover them with foil or finish cooking them in the microwave.
