Crispy Roasted Potatoes Recipe

Ingredients

8 potoatoes, peeled (or not) quartered or halved if small

Olive oil

1/2 cup plain bread crumbs

1/2 tbsp oregano

1 tbsp dried parsley

1/2 tbsp powdered garlic

1/2 tbsp chicken soup bouillon

1/2 tsp powdered sweet paprika

1 tsp powdered onion

1 1/2 tbsp grated romano, parmasean or other strong, dry cheese (kefalograviera is great)

Pepper to taste

Directions

Pre-heat oven to 400ºF

Mix dry ingredients in small bowl

Mix potatoes with 2 tbsp olive oil and place in small roasting pan, rounded part down

Generously sprinkle herb & cheese mixture over each half or quarter potato

Optional: drizzle additional olive oil over each potato

Roast for 45 minutes or until done.

The cheese also acts as an oil. My oven is fast so 45-50 minutes is all I need for them. If your potatoes are looking too brown and are not cooked, cover them with foil or finish cooking them in the microwave.
