Cream of Potato Leek Soup

- 8 baked potatoes skins removed shopping list
- 2 leeks washed and chopped shopping list
- 2 slices of bacon chopped shopping list
- 1/4 c olive oil shopping list
- flour shopping list
- salt pepper shopping list
- 1 qt half and half shopping list
- 2 qts chicken stock shopping list
- 2 c shredded cheese (cheddar) shopping list
How to make it
- Saute the leeks in the oil
- add chopped bacon
- add a few TBl flour to thicken
- Slowly add stock
- Heat thoroughly
- Chop potatoes and add to stock
- Cook over low heat for about 45 minutes
- Transfer to food processor and puree
- Transfer back to pot add half and half
- Add cheese
- Heat til melted
- Serve with crusty bread and a green salad
