Swedish Christmas Brown Beans Recipe
Traditional Christmas Eve dish for Swedes - sweet with just the right amount of sour. Swedish brown beans can be found at specialty shops or online (I get mine from Ingebretsen's in Minneapolis - they also have a website for online orders)

Ingredients
  • 2 cups dried Swedish brown beans
  • 6 cups water
  • 1 1/2 teaspoons salt
  • 1/2 cup white vinegar
  • 1/3 cup molasses
  • 3 tablespoons brown sugar,
  • 2 tablespoons butter
  • ½ tsp nutmeg
  • 1 small cinnamon stick,

Directions
  1. Pick over and rinse the beans.
  2. Add the water and soak the beans overnight.
  3. The next day, bring the beans and water to a boil.
  4. Cover and simmer for 1 1/2 hours.
  5. Add salt, vinegar, molasses, brown sugar, butter, nutmeg and cinnamon stick.
  6. Stir to combine.
  7. Simmer, uncovered, for 1 hour, or until the beans are tender.
  8. The liquid should be saucy. - if too runny, turn up the heat for 10 minutes or so until desired consistency is reached..
  9. Remove the cinnamon stick.
  10. Serve

I use to grow swedish brown beans... and loved the taste of them in the swedish baked beans. thank you for reminding me, I haven't made them in a long time
