Ingredients
  • 1-1/2 pounds raw shrimp small
  • 1/4 cup Dijon mustard
  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • 1 tablespoon sugar
  • 2 tablespoons wine vinegar
  • 4 tablespoons chopped fresh dill
  • 2 tablespoons chopped parsley

Directions
  1. In large saucepan bring salted water to a boil.
  2. Add shrimp and bring back to a boil.
  3. Cook shrimp for 2 minutes or until they turn pink.
  4. Immediately remove from heat then drain and run under cold water.
  5. Peel devein and chill until ready to use.
  6. In small bowl beat mustard with lemon juice then beat in olive oil slowly.
  7. The mixture should be thick and creamy.
  8. Mix sugar with vinegar until dissolved.
  9. Add vinegar to lemon and mustard mixture then add dill and parsley.
  10. Season sauce with salt and pour over shrimp then marinate for at least 4 hours.
  11. Half an hour before serving time bring back to room temperature.
