Ingredients
  • 1 Kg Shelled cooked prawns
  • 2 Large ripe mangos
  • 1 Handful of snow peas
  • 1 Handful of Pecans
  • 1 Jar of mayo
  • 1 teaspoon of Keens curry powder

Directions
  1. Find a *BIG* salad bowl, cut the mangos into bite sized pieces (keep as much of the juice in the bowl as you can), add the shelled prawns, top and tailed snow peas.
  2. Mix the mayo and the curry powder together, and then mix it gently into the prawn mix. The mango will break down a little but it adds to the dressing so don't stress.
  3. Once mixed chop the pecans roughly, but in large chunks and sprinkle on the top.
  4. Keep you fingers away from the bowl lest you loss them in the feeding frenzy. *grin*

Alterations


I have a similar recipe - instead of the curry/mayo sauce, marinade the prawns for a couple of hours before frying with :

garlic (2 cloves, minced),
ginger (thumb sized chunk, grated fine),
red chilli (x2, chopped finely),
lemongrass (1 stalk, bruised and cut into 1" pieces),
salt, pepper,
a little melted butter
and a splash of white wine.
