Lentil Salad

                    - lentils (French) shopping list
- olives shopping list
- bell pepper (red or green) shopping list
- sun dried tomatoes shopping list
- vinagrette of your choosing (mustardy works well) shopping list
How to make it 
                    - Prepare lentils. Bring to a boil with water, simmer until done, drain, rinse with water to take off some of the beaniness. I don't have the exact lentil instructions, sorry but your food coop should have them.
- Pit the olives and chop coarsely.
- Cut the bell pepper into small squares about the size of the olive bits.
- Chop the sun dried tomatoes again to about the same size. We buy these ones that are a bit soft already; if they are tough and leathery, reconsitute them first.
- Mix up a vinagrette.
- Mix all the ingredients together, let stand 5 minutes, and serve. We served it tonight with rotini pasta and a glass of inexpensive white wine, to celebrate the coming of spring.
