How to make it

  • Prepare lentils. Bring to a boil with water, simmer until done, drain, rinse with water to take off some of the beaniness. I don't have the exact lentil instructions, sorry but your food coop should have them.
  • Pit the olives and chop coarsely.
  • Cut the bell pepper into small squares about the size of the olive bits.
  • Chop the sun dried tomatoes again to about the same size. We buy these ones that are a bit soft already; if they are tough and leathery, reconsitute them first.
  • Mix up a vinagrette.
  • Mix all the ingredients together, let stand 5 minutes, and serve. We served it tonight with rotini pasta and a glass of inexpensive white wine, to celebrate the coming of spring.

    Man, this recipe makes me wish Spring would get here sooner - well, okay, EVERYDAY in Winter makes me wish Spring would arrive sooner, but great tasting salads make me swoon for better weather in which to enjoy them.
