White Mountain Cake Recipe
This came from my Mom's Kansas Womens' Cookbook....maybe it was named after our White Mountains here in NH....I don't know. I always thought it smelled like doughnut batter when I made it as a child.

Ingredients
  • 1 cup sugar
  • 1/3 c shortening
  • 1 egg
  • 1/2 C raisins (rehydrated and drained)
  • ¾ C milk
  • 1/8 tsp salt
  • 1 ¾ C flour
  • 2 tsp baking powder
  • ½ tsp nutmeg
  • 1 tsp lemon juice or extract

Directions
  1. Cream together thoroughly sugar, shortening and egg
  2. Add remaining ingredients all at one time
  3. Beat thoroughly, bake in a prepared loaf pan in a slow oven...325 degrees
  4. Best the second day like pound cake (if you can wait that long)
