Cold Pea And Tomato Salad Recipe

Perfect for spring and summer. Cool and delicious. I got this off of one of my recipe groups.

Ingredients
  • 1 cup tomatoes (cut into bite size)
  • 2 cups cold peas
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons high quality Italian dressing
  • handful fresh basil chiffonade
  • salt and pepper (to taste)

Directions
  1. Combine it all EXCEPT the peas, basil, and tomato. Mix it up lightly.
  2. Add in the vegetables and basil (do you consider a tomato a fruit or vegetable? Yes, it is technically a fruit I believe, but I can't bring myself to calling it one). Lightly combine all this.
  3. Let marinade for 30 minutes or more before serving.
  4. Keeps for a day or two.

This looks great. The only way I like to eat peas is cold...I can't wait to get the first peas of the season and try this...although I'll probably use mint instead of basil because basil won't be ready until later in the summer. Also the photo is fabulous.


I adore peas and I am really into making my dishes colorful when serving meals. This will be perfect as a side. Thanks for sharing.
