A real good square done in pineapple and graham cracker crumbs, my mother use to make this at christmas.

Ingredients
  • 14 double graham wafers crushed
  • 2 tbsp. brown sugar
  • ¼ c. melted butter
  • Mix together and press into 9x9 pan… Bake at 350 degrees for 10minutes.
  • TOP:
  • 3 c. coconut
  • 3 or 4 tbsp. well drain crushed pineapple
  • 1 can sweetened condensed milk
  • ¼ tsp. salt
  • ½ tsp. vanilla

Directions
  1. Spread on bottom mixture, and bake at 350 degrees for 20 to 25 minutes. Place under the broiler for the last minute to brown the top.
  2. ICING:
  3. 2 scant c. icing sugar
  4. 2 tbsp. margarine
  5. ½ tsp. vanilla
  6. 11/2 to 2 tbsp. crushed pineapple
  7. Mix well together, and if too stiff add 1 tsp. milk to bring to spreading consistency.
