This dish goes perfectly with rice...and if you like it stir fry like...can be serve that way too..all you need to do is discard your stock...or just add little for juice...ENJOY !!!

Ingredients
  • 125 g prawns washed and cleaned
  • 1 red pepper, cut into slivers
  • 1 green pepper, cut into slivers
  • jalapenos can be use if like it more hot
  • 1 tablespoon Thai fish sauce
  • 2 teaspoon of sugar
  • 2 tablespoons Thai red curry paste ( check out my red curry recipes)
  • 1/3 cup chicken stock or vegetable stock
  • Thai Basil Leaves discard stam - celanto leave optional
  • 2 lamon leaves thinly slice (optional)
  • 2 green onion cut 1/2 inch long
  • olive oil (for cooking)

Directions
  1. Heat some oil in a frying pan...add red curry pasted and lemon leaves cook about 10 mintues in medium to low heat.
  2. Add sugar and stir until sugar melt, add chicken stock bring to boil. When boil add peppers, green onion, fish sauce and prawns stir until prawns are cook *NOTE..do not over cook your prawns..appoximatly 7 to 8 mintues is enough.
  3. When done add Thai basil leaves and it ready to serve...best serve hot..

This is great. Quite hot but tasty. I used Cilantro as I couldn't get Lemon leaves and the taste is fantastic. Thank you.
