Old Fashioned Sweet Potato Pudding From Holiday Home Cooking Recipe
I happened upon this recipe which could be a variation of how we serve sweet potatoes or candied yams every holiday season.

Ingredients
  • 8 tbls. butter
  • 4 cups grated raw sweet potato
  • 1-11/2 cups light brown sugar
  • 2 cups milk 1/2 tsp. baking soda
  • 1/2 cup unbleached flour
  • 1 tsp. nutmeg
  • 2 eggs, beaten

Directions
  1. Preheat oven to 350 degrees.
  2. Melt the butter in an 8 inch baking dish.
  3. Mix all of the other ingredients together, eggs last.
  4. Pour into hot baking dish and bake.
  5. When crust forms at the edges, after 20 minutes or so, turn under, stir, and let crust form again.
  6. Total baking time 45-50 minutes.
