Frosted Pecans Recipe
We have a pecan tree and usually have more pecans than we know what to do with! (None this year, due to drought). Lightly toasting the pecans beforehand makes this especially good. Great gift, too.

Ingredients
  • 1 c sour cream
  • 3 c sugar
  • 1 T vanilla
  • 6 c pecan halves

Directions
  1. Combine sour cream, sugar and vanilla in heavy 4-6 qt saucepan or iron skillet
  2. Cook over medium to medium-high heat until mixture reaches soft-ball stage (234 degrees on candy thermometer)
  3. Stir frequently while cooking to prevent scorching
  4. Add pecans and stir until evenly coated
  5. Turn onto lightly greased baking sheets, separating nuts with 2 forks
  6. When completely cooled, store in airtight container
