Crispy Fried brinjals

- 2 medium size Brinjals (eggplants / baigan / aubergines) shopping list
- Red chilly powder to taste shopping list
- salt to taste shopping list
- ½ cup gram flour shopping list
- Pinch baking soda shopping list
- oil to deep fry shopping list
How to make it
- Make semi thick paste of gram flour, salt, red chilly powder, baking soda and water
- Thinly slice brinjals
- Mix 1/2 tsp salt and 1/2 tsp red chilly powder
- Sprinkle this mixture over each slice of brinjal
- keep for 1/2 hour
- Then dip in paste one bye one and deep fry to brown (like pakoras)
- Serve hot with mint or coriander dip
