Ingredients
  • 4 slices bacon, cut into 1 inch pieces
  • 1 medium onion, sliced
  • 2 - 2 1/2 pounds fryer chicken ( I use chicken breasts)
  • 1 pound can tomatoes, cut into pieces
  • 1/3 cup 57 sauce
  • 1 tbsp sugar
  • hot buttered rice

Directions
  1. Saute bacon in large skillet, until partially cooked, then saute onion in same skilet until onion is tender
  2. remove bacon and onion; set aside. drain drippings-reserve 2 tbsp
  3. brown chicken in drippings. sprinkle with salt and pepper. drain excess fat
  4. combinie sauce, tomatoes, bacon, onion and sugar.
  5. pour over chicken.
  6. cover, simmer 40-45 minutes or until tender, basting occasionally.
  7. thicken with a flour/water mixture if desired
  8. serve over rice.
