Hunter Chicken

- 4 slices bacon, cut into 1 inch pieces shopping list
- 1 medium onion, sliced shopping list
- 2 - 2 1/2 pounds fryer chicken ( I use chicken breasts) shopping list
- 1 pound can tomatoes, cut into pieces shopping list
- 1/3 cup 57 sauce shopping list
- 1 tbsp sugar shopping list
- hot buttered rice shopping list
How to make it
- Saute bacon in large skillet, until partially cooked, then saute onion in same skilet until onion is tender
- remove bacon and onion; set aside. drain drippings-reserve 2 tbsp
- brown chicken in drippings. sprinkle with salt and pepper. drain excess fat
- combinie sauce, tomatoes, bacon, onion and sugar.
- pour over chicken.
- cover, simmer 40-45 minutes or until tender, basting occasionally.
- thicken with a flour/water mixture if desired
- serve over rice.
