How to make it

  • Saute bacon in large skillet, until partially cooked, then saute onion in same skilet until onion is tender
  • remove bacon and onion; set aside. drain drippings-reserve 2 tbsp
  • brown chicken in drippings. sprinkle with salt and pepper. drain excess fat
  • combinie sauce, tomatoes, bacon, onion and sugar.
  • pour over chicken.
  • cover, simmer 40-45 minutes or until tender, basting occasionally.
  • thicken with a flour/water mixture if desired
  • serve over rice.
