How to make it

  • Put the first 9 ingredients in the bowl of a food processor and process until the mixture forms a smooth paste, scraping down the sides of the bowl occasionally.
  • Spread the shrimp paste evenly over the bread slices, then sprinkle the sesame seeds over the paste, pressing them down to make them stick.
  • Remove the crusts, then cut each slice diagonally into 4 triangles, then cut each triangle in half again (you will have 64 triangles in total).
  • Heat 2 inches of vegetable oil in a heavy saucepan or wok, until hot but not smoking (about 350ºF)
  • Fry the shrimp-coated triangles for 30 to 60 seconds, turning once.
  • Drain on paper towels and serve hot.
