How to make it

  • preheat oven to 200
  • in a small saucepan, combine the cranberry sauce and salsa. Mix well and bring to a simmer over low heat.
  • meanwhile, in a large bowl, combine potatoes, stuffing, vegetables, turkey, parsley, onion, eggs seasonings.
  • Mix well. Place the breadcrumbs in a large shallow bowl.
  • In a large skillet, heat the oil over medium high heat. with lightly floured hands, for about 1/3 cup into a patty and put into bread crumbs. toss to coat.
  • cook in hot skillet 3 to 4 minutes per side or until lightly browned.
  • Transfer the fritters to baking sheet and place into the oven to keep warm.
  • serve with the cranberry salsa.

    We usually go to relatives for Thanksgiving. I wonder if anyone would notice my leaving with a bag of leftovers... this sounds delicious.
