Ingredients
  • 1/2 cup cranberry sauce
  • 1/2 cup tomato salsa
  • 2 cups mashed potatoes
  • 1 cup stuffing
  • 1 cup cooke vegetables (your choice)
  • 1 1/2 cup chopped turkey
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 eggs
  • salt and pepper
  • 1 tsp paprika
  • 1 cup breadcrumbs
  • 2 tbsp oil

Directions
  1. preheat oven to 200
  2. in a small saucepan, combine the cranberry sauce and salsa. Mix well and bring to a simmer over low heat.
  3. meanwhile, in a large bowl, combine potatoes, stuffing, vegetables, turkey, parsley, onion, eggs seasonings.
  4. Mix well. Place the breadcrumbs in a large shallow bowl.
  5. In a large skillet, heat the oil over medium high heat. with lightly floured hands, for about 1/3 cup into a patty and put into bread crumbs. toss to coat.
  6. cook in hot skillet 3 to 4 minutes per side or until lightly browned.
  7. Transfer the fritters to baking sheet and place into the oven to keep warm.
  8. serve with the cranberry salsa.

Just stumbled on this and saved it for my Thanksgiving leftovers. It sounds like a great change from my normal Thanksgiving hash.


We usually go to relatives for Thanksgiving. I wonder if anyone would notice my leaving with a bag of leftovers... this sounds delicious.
