Chicken and Sausage Jambalaya

- 1small chicken cut up in to 2 inchpieces rinsed shopping list
- 1/2 cup oil shopping list
- 2 cups finely chopped onion shopping list
- 1cup finely chopped green onion shopping list
- 3 cups long grain rice shopping list
- 8cups chicken stock in can or plastic container shopping list
- 1 tablsp garlic salt to taste shopping list
- Ground cayennne to taste shopping list
- 1 cup chopped fresh parsley shopping list
- 2 lbs smoked sausage, sliced 1/4 inchthick shopping list
How to make it
- IN a Heavy high walled chicken fryer over a medium heat,brown the chicken in the oil,stirring the meat around so it won't stick.
- After the chicken has browned remove from pot. Then add the onions,bell pepper. parsley and g reen onions and saute till the onions are clear
- Stir in the sausage, rice and stock garlic. chicken sallt and red pepper
- Continue cooking until nearly all the liquid has boiled oout then r educe the heat to low,cover and let simmer until the rice is done about an hour. Do not lift the lid for at least an hour
- This beats any box version you will see
