Chicken  And  Sausage Jambalaya Recipe

Ingredients
  • 1small chicken cut up in to 2 inchpieces rinsed
  • 1/2 cup oil
  • 2 cups finely chopped onion
  • 1cup finely chopped green onion
  • 3 cups long grain rice
  • 8cups chicken stock in can or plastic container
  • 1 tablsp garlic Salt to taste
  • Ground cayennne to taste
  • 1 cup chopped fresh parsley
  • 2 lbs smoked sausage, sliced 1/4 inchthick

Directions
  1. IN a Heavy high walled chicken fryer over a medium heat,brown the chicken in the oil,stirring the meat around so it won't stick.
  2. After the chicken has browned remove from pot. Then add the onions,bell pepper. parsley and g reen onions and saute till the onions are clear
  3. Stir in the sausage, rice and stock garlic. chicken sallt and red pepper
  4. Continue cooking until nearly all the liquid has boiled oout then r educe the heat to low,cover and let simmer until the rice is done about an hour. Do not lift the lid for at least an hour
  5. This beats any box version you will see
