Potato Cheese Loaves Recipe

Ingredients
  • 1 cup milk
  • 2 tbsp. softened butter
  • 2 pkg. dry yeast
  • 1 1/2 cups warm water
  • 2 tbsp. sugar
  • 2 tbsp prepared yellow mustard
  • 1 1/2 tsp. salt
  • 1/4 cup instant mashed potato granules
  • 2 cups shredded Cheddar cheese
  • 6 to 7 cups flour
  • 1 egg, slightly beaten
  • sesame or poppy seeds

Directions
  1. Heat milk and butter to scalding; cool to lukewarm.
  2. In a large bowl, dissolve yeast in warm water.
  3. Add cooled milk, sugar, mustard and salt.
  4. Stir in potato granules, cheese and enough flour to make a soft dough.
  5. Knead on floured surface about 8 to 10 minutes until smooth and satiny.
  6. Place in greased bowl; cover and let rise in warm place until light and doubled in bulk, about 45 to 60 minutes. Punch down, divide in half and shape into 2 loaves.
  7. Place in 2 well greased 9"x5" loaf pans. Brush with beaten egg and sprinkle with sesame or poppy seeds.
  8. Let rise again until doubled in size, 30 to 45 minutes.
  9. Bake in a 375ºF oven, 45 to 50 minutes, until deep golden brown.
