Ladyfinger Cream Sanwiches

- 1/4 cup all purpose flour shopping list
- 1/4 cup sugar shopping list
- 1/4 cup sugar substitute (like splenda) shopping list
- 1/4 teaspoon salt shopping list
- 2 3/4 cups milk, divided shopping list
- 3 eggs shopping list
- 3/4 teaspoon vanilla extract shopping list
- 2 packages ladyfingers, split (3 ounces each) shopping list
- 2 teaspoons coarse sugar shopping list
How to make it
- In a small saucepan, combine flour, sugar, sugar subsitiute, salt and 2 1/2 cups milk until smooth.
- Cook and stir over medium high heat until thickened and bubbly.
- Reduce heat; cook and stir 2 minutes longer; remove from heat.
- In a small bowl, whisk 2 eggs.
- Stir in a small amount of hot filling into eggs; return all to pan, stirring constantly.
- Bring to a gentle boil; cook and stir 2 minutes longer.
- Remove from the heat; gently stir in vanilla.
- Transfer to a bowl; cover with plastic wrap and refrigerate until chilled.
- Place tops of ladyfingers on an ungreased baking sheet.
- In a small bowl wisk remaining egg and milk; lightly brush over ladyfingers.
- Sprinkle with coarse sugar.
- Broil 4 inches from the heat for 1 to 2 minutes or until golden brown.
- Spread custard over the bottoms of ladyfingers; replace tops.
- Serve immediately.
- Makes 24 sandwiches.
