Carrots are sweeter, so you'll probably want to cut back on the sugar, unless you like your bread quite sweet ~ which can be a good thing too!

I made this last night with parsnips that have been sitting looking at me from my fridge for a while now. two big parsnips made just over a cup of puree. it was simple to make. took just over an hour to cook and my kids and husband who are uber fussy about veg couldn't even sniff the parsnip. this is a total keeper for me. i get veg delivered in a box scheme and no more will i groan when i see a parsnip. love it thanks!!
