adapted from our own local dish called chicken afritada.

Ingredients
  • 4 medium sized chicken (any part)
  • 200 g tomato sauce
  • 2 medium sized potatoes; quartered
  • 1/4 cup chicken broth
  • red bell pepper, julienned
  • green bell pepper, julienned
  • 3 cloves garlic, crushed and chopped
  • 1 onion, chopped
  • salt and pepper

Directions
  1. saute garlic and onion. add chicken. cook for about 3 minutes.
  2. pour in the chicken stock and tomato sauce. bring to a boil.
  3. add potatoes and let it simmer until it cooks.
  4. mix in the bell peppers.
  5. season with salt and pepper.
