How to make it

  • For the chocolate sauce, combine sugar and baking cocoa in a saucepan and mix well.
  • Stir in the water and corn syrup until smooth.
  • Bring to a boil over medium heat, stirring comstantly.
  • Remove form the heat and stir in the vanilla.
  • Pour into a bowl and cover; chill until serving time
  • For the raspberry sauce, combine the raspberries and sugar in a saucepan.
  • Cook over medium-low heat for 3 minutes or until the sugar dissolves, stirring constantly.
  • Strain the mixture and return to the sauscepan.
  • Stir in the cornstarch.
  • Bring to a boil over medium heat.
  • Boil for 1 minute or until slightly thickened.
  • Pour into a bowl and cover.
  • Chill until serving time.
  • For the pears, slice 1/4 inch from the bottom of each pear to make it stand upright.
  • Peel and core from the bottom, leaving the stem intact
  • Bring the water, lemon juice and vanilla bean to a boil in a heavy saucepan over medium heat.
  • Stand the pears in the liquid and reduce the heat.
  • Simmer,covered, for 20 min. or until the pears are tender.
  • Remove from liquid and cool.
  • To serve,place 1 tbsp raspberry sauce on each dessert plate.
  • Stand 1 pear in the raspberry sauce and drizzle with 1 tbsp of the chocolate sauce.
