This is a fresh twist on green beans amandine. Marcona almonds, from Spain, are more tender than California almonds and are usually sold roasted and salted. Look for them at specialty foods stores and online at tienda.com. From Bon Appetit 11/07

This is a good way to serve green beans. I've never used Marcona almonds for this kind of dish, but it makes a lot of sense. I've used chestnuts, but Marconas seem like a tasty alternative. I'll try this -- luckily, you can find Marconas at my local Fresh Fields.
