How to make it

  • Spray bottom and sides of an 8 inch spring form pan with cooking spray.
  • Mix crumbs with butter; pat into prepared pan; bake at 350 degrees for 8 minutes.
  • Remove from oven to cool.
  • Beat cream cheese until light and fluffy.
  • Blend in cheddar cheese.
  • Gradually beat in sugar and flour.
  • Add eggs, one at a time, beating until smooth.
  • Mix in lemon juice and cream.
  • Stir in lemon zest and vanilla.
  • Bake at 350 degrees for 30 to 40 minutes.
  • Cool, then chill or serve at room tempature.
  • Garnish with lemon slices, grapes or mint leaves....

    Looks interesting. What does adding cheddar to your cheesecake do? I mean, how did you come by this idea. It is intriquing for sure.
