Lemon Cheddar Cheesecake

- 1 cup crushed vanilla wafers or graham crackers shopping list
- 2 tablespoons butter, melted shopping list
- 2 packages cream cheese, softened (8 oz each) shopping list
- 1/2 cup cheddar cheese, finely shredded shopping list
- 3/4 cup sugar shopping list
- 2 tablespoons flour shopping list
- 3 eggs shopping list
- 1/4 cup fresh lemon juice shopping list
- 1/4 cup whipping cream shopping list
- 1/2 teaspoon lemon zest shopping list
- 1/2 teaspoon vanilla shopping list
How to make it
- Spray bottom and sides of an 8 inch spring form pan with cooking spray.
- Mix crumbs with butter; pat into prepared pan; bake at 350 degrees for 8 minutes.
- Remove from oven to cool.
- Beat cream cheese until light and fluffy.
- Blend in cheddar cheese.
- Gradually beat in sugar and flour.
- Add eggs, one at a time, beating until smooth.
- Mix in lemon juice and cream.
- Stir in lemon zest and vanilla.
- Bake at 350 degrees for 30 to 40 minutes.
- Cool, then chill or serve at room tempature.
- Garnish with lemon slices, grapes or mint leaves....
