Blackberry Pie Recipe
BLACKBERRY PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Carey Estate in Rockwall, Texas in 1988.

Ingredients
  • 4 cups blackberries washed and dried
  • 1-1/4 cup granulated sugar
  • 8 teaspoons cornstarch
  • 2 tablespoons quick-cooking tapioca
  • 6 tablespoons water
  • 4 tablespoons butter
  • 1 recipe pastry for a 9 inch double crust pie crust

Directions
  1. Mix together berries, sugar, cornstarch, tapioca and water.
  2. Mix and let sit while you make your pie crust.
  3. Put berries in bottom crust and put 4 pats of butter on top.
  4. Put on top crust and crimp edges.
  5. Make slits in crust to allow steam to escape.
  6. Bake at 425 for 15 minutes then reduce heat to 350 and bake 45 minutes.

Made this one for Christmas dinner and it was a major hit!! Everyone loved the nice change from the traditional holiday pies...I will admit that I cheated and used canned blackberry pie filling as the fresh berries were not available...It turned out great with just a slight reduction in the amount of sugar used!!

Fantastic pie!!!
