Chocolate Shortbread Cookie Bars Recipe
This is a two step process that makes a great cookie bar. If you put them in the refrigerator, but them first as they will be easier to cut.

Ingredients
  • 1 cup softened butter (2 sticks)
  • 1/2 cup powdered sugar
  • 1/4 tsp salt
  • 2 cups flour
  • .
  • 4 beaten eggs
  • 1 cup melted butter, cooled to room temperature
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup flour
  • 1 package chocolate chips

Directions
  1. Cream butter with 1/2 cup powdered sugar and salt. Add flour mix well. Pat it out onto a greased 9 x 13 pan with your fingers. Bake at 350 degrees for 35 minutes. (this is the shortbread crust) Remove from oven but don't turn the oven off.
  2. Mix eggs with melter butter and sugar. Add baking powder, salt and flour. Mix well. Melt chocolate chips in the microwave on high (stir after each minute). Add melted chocolate to bowl and mix well.
  3. Pour this mixture on top of the shortbread crust. Tip the pan so it covers all the crust. Bake for another 25 minutes.
  4. Let cool thoroughly and cut int brownie sized bars. Sprinkle the top with powdered sugar.
