- 1/8 cup of olive oil shopping list
- 2 large yellow onions, diced shopping list
- one each red, yellow, green pepper, diced shopping list
- 4, yes 4 cloves of garlic, minced shopping list
- bouquet garni (tie up in cheesecloth, 1 bay leaf, a tsp of black peppercorns, some parsley stems, some thyme stems, some parsley, some chopped basil) shopping list
- 2 big jars of favorite chunky veggie marinara sauce shopping list
- 2 bottles of clam juice shopping list
- 3/4 cup of dry vermouth shopping list
- 3/4 cup of chicken broth shopping list
- 1 lb. of thick white fish fillets shopping list
- 1 lb. of shelled and deveined shrimp shopping list
- 1 dozen scrubbed mussels shopping list
- 1/2 tsp of salt shopping list
- as much crushed red pepper flakes as you dare, I like at least 1/2 tsp. shopping list
How to make it
- Heat oil in large stock pot.
- Wilt onions and garlic.
- Add pepper and cook slightly to wilt but not brown.
- Add marinara, clam juice, wine, broth, bouquet garni.
- Simmer 20 minutes.
- Add fish, shrimp and mussels, cook over low heat 8-10 minutes.
- Fish out bouquet garni and discard.
- Season soup to taste with salt and red pepper.
- Serve with crusty bread and more chilled white wine.
- You can break the bank and add more seafood if you desire, like cracked crab legs, crab claws, clams, etc. I want simple and fast.
