I love good soup, especially fish based stews. This comes together very quickly and is tasty to boot.

Ingredients
  • 1/8 cup of olive oil
  • 2 large yellow onions, diced
  • one each red, yellow, green pepper, diced
  • 4, yes 4 cloves of garlic, minced
  • Bouquet garni (tie up in cheesecloth, 1 bay leaf, a tsp of black peppercorns, some parsley stems, some thyme stems, some parsley, some chopped basil)
  • 2 big jars of favorite chunky veggie marinara sauce
  • 2 bottles of clam juice
  • 3/4 cup of dry vermouth
  • 3/4 cup of chicken broth
  • 1 lb. of thick white fish fillets
  • 1 lb. of shelled and deveined shrimp
  • 1 dozen scrubbed mussels
  • 1/2 tsp of salt
  • as much crushed red pepper flakes as you dare, I like at least 1/2 tsp.

Directions
  1. Heat oil in large stock pot.
  2. Wilt onions and garlic.
  3. Add pepper and cook slightly to wilt but not brown.
  4. Add marinara, clam juice, wine, broth, bouquet garni.
  5. Simmer 20 minutes.
  6. Add fish, shrimp and mussels, cook over low heat 8-10 minutes.
  7. Fish out bouquet garni and discard.
  8. Season soup to taste with salt and red pepper.
  9. Serve with crusty bread and more chilled white wine.
  10. You can break the bank and add more seafood if you desire, like cracked crab legs, crab claws, clams, etc. I want simple and fast.
