Baked Eggs with Cream Spinach and Parmesan

- 2 Tbl butter, plus a little extra for greasing shopping list
- fresh spinach, about 3 Cups shopping list
- 1/4 tsp nutmeg shopping list
- 4 eggs shopping list
- 1/4 Cup light cream shopping list
- 2 Tbl freshly grated Parmesan shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 325 F/160C, lightly grease 2 individual ceramic gratin dishes (or similar)
- Melt the butter in a large skillet over low heat
- Add the spinach
- Stir until wilted
- Season with nutmeg and divide between prepared dishes
- Gently break two eggs into each dish
- Pour the cream over the eggs, sprinkle with Parmesan, then season with salt and pepper
- Bake for about 10 minutes or until whites are set and cooked and yolks are soft
- Serve immediately

This was delicious, but it took more like 20 minutes for whites to set.

Saw this recipe in IMI and love all the ingredients so made it this morning for breakfast. Had trouble with my oven temp so cooked it longer than 10 min.. Quite enjoyed it. Lovely flavours. Added my two cents in the IMI thread as well.
