QUICK AND EASY BOUULLABAISSE Recipe
Had this tonight... it was sooooo good. I am a lover of seafood! Only about an hour for fresh bouillabaisse to your bowl! Yummers!

Ingredients
  • 1/4 cup olive oil
  • 2 onions, peeled and chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 6 tomatoes, peeled and chopped small
  • 1 cup fish stock or 1 bottle clam juice
  • 1 cup dry white wine or chicken stock
  • Pinch saffron
  • 6 tablespoons fresh chopped parsley or more
  • 1 pound white fish, cleaned, skinned, and cut into serving pieces
  • 24 raw, shucked clams or mussels I had to use canned ... used 2
  • 24 small or 12 large raw shrimp, cleaned more if you like shrimp!
  • Salt and pepper to taste

Directions
  1. Combine oil, onions, garlic, and bay leaf in Dutch oven.
  2. Cover and simmer 10 minutes.
  3. Add tomatoes, stock, wine saffron, and parsley, cover, and simmer 20 minutes longer.
  4. Add fish, clams or mussels, and shrimp, cover, and cook 15 minutes.
  5. Season with salt and pepper.
