Potato Tapas With Aioli Recipe
I love Tapas. Here's an easy Tapas recipe for when company comes over.

Ingredients
  • 5 Large Potatoes
  • 1/2 cup Mayo
  • 1/2 cup Sour Cream
  • 2 Chipotle Peppers
  • 1/4 cup Olive Oil
  • Paprika
  • Salt
  • Pepper

Directions
  1. Slice the Potatoes into 1/8 inch thick rounds.
  2. Sprinkle with some Salt, Pepper and Paprika and Bake in a 450 degree oven for 10 minutes, or until cooked.
  3. Place the Mayo, Sour Cream, Chipotle Peppers and more Paprika into a food processor and combine.
  4. WHILE THE FOOD PROCESSOR IS RUNNING, slowly drizzle the Olive oil into the mixture.
  5. Salt and pepper the Mayo mixture (Aioli) to taste.
  6. Serve the Potatoes on a platter with the Aioli on the side for dipping.
