How to make it

  • Slice the Potatoes into 1/8 inch thick rounds.
  • Sprinkle with some Salt, Pepper and Paprika and Bake in a 450 degree oven for 10 minutes, or until cooked.
  • Place the Mayo, Sour Cream, Chipotle Peppers and more Paprika into a food processor and combine.
  • WHILE THE FOOD PROCESSOR IS RUNNING, slowly drizzle the Olive oil into the mixture.
  • Salt and pepper the Mayo mixture (Aioli) to taste.
  • Serve the Potatoes on a platter with the Aioli on the side for dipping.
