How to make it

  • Sift flour, sugar, baking powder, salt and baking soda in a large bowl.
  • Cut in butter until mixture is crumbly.
  • Add egg, orange peel and orange juice all at once.
  • Stir just until mixture is evenly moist.
  • Fold in cranberries and walnuts.
  • Spoon into a 9 x 5 x 3 inch loaf pan.
  • Bake at 350 degrees for 1 hour and 10 minutes or until toothpick inserted in center comes out clean.
  • Remove from pan and cool on a wire rack.
  • Sprinkle with confectioners' sugar when cool.
  • OR
  • Glaze:
  • 4 Tbsps. orange juice
  • 5 Tbsps. granulated sugar
  • 1 Tbsp. butter - NOT margarine
  • Combine the orange juice, sugar and butter in a saucepan.
  • Bring to a gentle boil.
  • Remove from heat and allow to cool before you drizzle over top of the loaf.
  • Let the loaf stand for 5 minutes.
  • Remove from the pan and cool completely on a wire rack.
  • Wrap and store for a day before serving.

    great! I have all the ingredients in my house and this will be a nice little take along to some little gatherings I am invited too as a gift for the hostess.....she may serve or keep for herself!
