Ingredients
  • 3 tablespoon Vegetable Oil
  • 3 stalks celery, coarsely chopped
  • 2 carrots, thinly sliced
  • 1 medium onion, chopped
  • 1 cup smoked sausage
  • 6 cups chicken broth
  • 1/2 teaspoon pepper
  • 3 cups cubed cooked turkey or chicken
  • Dumplings:
  • 3/4 cup Self-Rising Flour
  • 1/4 cup Self-Rising Corn Meal Mix
  • 3 tablespoons All-Vegetable Shortening
  • 1/2 teaspoon sage leaves
  • 1/3 cup milk

Directions
  1. Heat oil in Dutch oven or large saucepan over medium-high heat. Add celery, carrots, onion and smoked sausage; cook and stir until vegetables are tender.
  2. Add broth and pepper.
  3. Bring to a boil.
  4. Reduce heat to medium low; cover and simmer 15 minutes.
  5. Stir in turkey; return to simmer.
  6. Place flour and cornmeal in medium bowl. \
  7. With pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs.
  8. Stir in sage.
  9. Add milk; stir just until dry ingredients are moistened.
  10. Drop dough by teaspoonfuls on simmering stew.
  11. Cover; cook for 10 to 15 minutes or until dumplings are firm.
