How to make it

  • Heat oven to 180 C. Coat 8" round cake pan with cooking spray.
  • Heat chocolate in microwave on high 30 seconds, stir.
  • Heat another 30 seconds or until melted.
  • Sift flour, baking powder and salt onto a sheet of wax paper.
  • Beat butter in bowl until creamy.
  • Beat in brown sugar.
  • Add egg, beat well.
  • Add vanilla and melted chocolate.
  • Alternately beat flour mixture and milk into butter chocolate mixture.
  • Pour into pan. Bake 35 - 40 min.or until done.
  • Cool in pan 10 min. Remove from pan and let cool.
  • Meanwhile,prepare frosting.
  • Mix sugar and cornstarch; add chocolate and salt.
  • Add boiling water. Cook until mixture thickens(4-5 minutes).
  • Remove from heat. Add butter and vanilla.
  • Mix well and leave to cool.
  • Cut cake in three layers.
  • Place one cake layer on a serving platter.
  • Spread the top with frosting and chopped pistachios.
  • Place the second layer on top of the first layer and spread frosting and pistachios.
  • Place the third layer on top and frost the top and sides of the cake with frosting.
  • Sprinkle chopped pistachios and grated chocolate to cover the top.
  • Chill before serving.
