How to make it

  • Preheat oven to 350°F. Grease a 9x5x3-inch loaf pan.
  • In a large mixing bowl, using an electric mixer set on high speed, beat butter until light and fluffy.
  • Gradually add brown sugar, and continue beating until mixture is very light and fluffy.
  • Reduce mixer speed to medium. Add eggs, 1 at a time, beating well after each addition; beat in applesauce and vanilla.
  • Reduce mixer speed to low. In a small bowl combine flour, cinnamon, baking soda, and salt.
  • Beat flour mixture into egg mixture until just combined. Stir in apple, walnuts, and raisins.
  • Pour batter into prepared loaf pan; bake until a toothpick inserted in center comes out clean, about 1 hour 30 minutes.
  • Place pan on a wire rack to cool for 20 minutes.
  • Using a knife, carefully loosen loaf from sides of pan; invert onto rack and turn top side up.
  • Cool completely before slicing. (This probably won't happen)
