Ingredients

1/4 cup butter

1/4 cup shortening

2/3 cup sugar

2 eggs, beaten

1 1/2 cups grated cooking apples, including any juice

1/2 cup grated sharp Cheddar cheese

1/4 cup chopped walnuts or pecans

2 cups all-purpose flour

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

Directions

Preheat oven to 350ºF.

Cream butter, shortening and sugar. Add beaten eggs and mix well. Add apples, cheese and nuts.

Add sifted dry ingredients and mix lightly.

Bake in a greased 9"x5" loaf pan for 50 to 60 minutes.

The only thing I had a bit of trouble with was that it was a bit on the crumbly side. I wonder if I put too much apple in it. I tried to put the 1 1/2 cup, but I ground two granny smith and it was a tad over. Also didn't have sharp cheddar cheese so used monteray jack. Was excellent, though! Thanks! (Again, I hope you don't mind my uploading a picture!)
