Banana Cream Cheesecake Recipe
This is the best cheesecake I've ever tasted. One of my aunt's recipes, not sure where she came across it.

Ingredients
  • 20 vanilla cream sandwich cookies, crumbled
  • 1/4 cup melted butter
  • 2 lbs cream cheese
  • 2/3 cup granulated sugar
  • 2 Tbsp cornstarch
  • 3 eggs
  • 3/4 cup mashed ripe bananas
  • 1/2 cup heavy whipping cream
  • 2 tsp vanilla extract

Directions
  1. Preheat oven to 350.
  2. Combine butter and cookie crumbs, press evenly in the bottom and sides of a 10 inch pie pan.
  3. Refrigerate.
  4. Beat cream cheese with electric mixer until light and fluffy.
  5. Beat in sugar and cornstarch, then eggs, then bananas, whipping cream and vanilla.
  6. Pour mixture over prepared crust.
  7. Place pan on a cookie sheet and bake at 350 for 15 minutes.
  8. Reduce oven to 200 degrees and bake an additional 75 minutes, or until center is almost set.
  9. Allow to cool completely, then refrigerate, uncovered for about 6 hours.
