Ingredients
  • ¾ cup raw sugar
  • ½ cup “plain” butter (I always used salted)
  • 1 egg
  • 1 ¼ cups flour
  • 2 tsp baking powder
  • ½ cup buttermilk
  • 1 tbsp grated lemon rind
  • 1 tsp lemon extract

Directions
  1. Preheat oven to 350F.
  2. Mix sugar and butter until light and fluffy.
  3. Add egg, mix well.
  4. Stir in flour and baking powder, alternating with buttermilk.
  5. Add lemon rind and lemon extract.
  6. Stir to mix.
  7. Pour batter into well buttered, floured loaf pan. Bake for 45-50 minutes.
  8. Check for doneness with toothpick.
