This dish was concocted in a hurry after a long day of fishing with my son. It was a beautiful day on the lake. The boy found out what good fishing days are all about. The photo is of the fisherman and the actual fish we used.

Ingredients
  • Aluminum Foil
  • 2.5 to 3 pound whole rainbow trout, cleaned, skin and head on. (other species of trout and salmon work also).
  • Fresh cilantro.
  • Fresh sage.
  • Fresh Basil.
  • Lemon cut into wedges.

Directions
  1. Go fishing.
  2. Preheat oven 350F
  3. Stuff cavity and wrap fish with herbs.
  4. Wrap in foil, sealing as best as you can using foil to hold herbs around and in the fish.
  5. Bake in oven just until flaky 20-45 minutes depending on size. Trout and salmom are delicate fish and will be dry if overcooked and not very good. The fish in photo took about 40 minutes. Do adjust time acording to size of fish.
  6. Remove form oven, discard herbs, remove fish from bone and serve with lemon wedges.
  7. Clean up mess.
  8. Go fishing.
