- 1 4# duck-washed,patted dry and skin pricked all over shopping list
- flour shopping list
- salt and pepper to taste shopping list
- 1 clove garlic-mashed shopping list
- 1/2 cup apricot nectar shopping list
- 1/2 cup dried apricots-chopped shopping list
How to make it
- pre heat oven to 350F.
- sprinkle duck with seasoning and flour
- place skin side up on a rack in a roasting pan
- bake for 1 hour
- mix garlic,nector and apricots
- remove duck from oven,take off rack and drain fat from pan and cavity
- return duck to pan,without rack,
- pour apricot mixture over duck
- cover and roast for 30 minutes,or till done to your taste.
- duck may be quartered before roasting or left whole
