Ingredients
  • 1 4# duck-washed,patted dry and skin pricked all over
  • flour
  • salt and pepper to taste
  • 1 clove garlic-mashed
  • 1/2 cup apricot nectar
  • 1/2 cup dried apricots-chopped

Directions
  1. pre heat oven to 350F.
  2. sprinkle duck with seasoning and flour
  3. place skin side up on a rack in a roasting pan
  4. bake for 1 hour
  5. mix garlic,nector and apricots
  6. remove duck from oven,take off rack and drain fat from pan and cavity
  7. return duck to pan,without rack,
  8. pour apricot mixture over duck
  9. cover and roast for 30 minutes,or till done to your taste.
  10. duck may be quartered before roasting or left whole
