Coconut Macaroons Recipe
One of my favorite Christmas cookies! I got sick of chocolate chips and fruit cookies around the holidays so I added some refreshing coconut to my goodies! Very good and chewy! Just right!

Ingredients
  • 5 1/3 c. flaked coconut
  • 1 can (14 oz) sweetened condensed milk
  • 2 tsp. vanilla extract
  • 1 tsp. almond extract
  • 1/4 c. chocolate chips (optional)

Directions
  1. Preheat oven to 350 degrees F. Line pan with foil and grease.
  2. Combine coconut, condensed milk, vanilla and almond extract in large bowl.
  3. Drop by rounded spoonfuls on pan. Press tops of cookies lightly with back of spoon.
  4. Bake for 10-14 minutes or until lightly browned around the edges.
  5. Remove immediately from pans and place on wire racks.
  6. Store loosely covered at room temperature.
  7. ****May add chocolate chips to coconut mixture in bowl to add some chocolate.
